Berries

Wild berries including blackberries, raspberries, blueberries, huckleberries, and gooseberries were important in the diets of the Indians and early Missouri settlers.  By the late 1800's, Missourians were commercially producing blackberries, raspberries, and gooseberries.   On the other hand, the blueberry industry in Missouri began in the 1970's.

Berry pie

Sift 3 tablespoons flour, 1/2 teaspoon cinnamon, one pinch salt, and 3/4 cup sugar together.  Add 3 cups berries and mix well.  Pour into pastry lined pit tin, moisten edge of dough with water, cover with top crust making opening for steam to escape.  Bake at 400 degrees Fahrenheit for 45 minutes or until the juice runs clear.

Pie crust

Sift together 1 1/2 cups flour, 1/2 teaspoon salt, and lightly work in chilled lard (1/4 cup) and butter (1/4 cup).  Add 1/3 cup or less ice water slowly and roll on floured board.  Line pie tin.  Have dough well over the edge of the pan.
