Peaches

Peaches were a part of every early homesteader's fruit planting.  Dried peaches were an important staple during Missouri's cold winters.  By 1890, peaches were an important commercial crop.  'Elberta' was the most popular variety grown at that time.  Peaches were shipped all over the U. S., even to California.  Presently, most of the peach industry is located in southeast Missouri.  'Loring', developed at Mountain Grove, is an important variety.

Peach dumplings

Sift together 1 1/2 cups flour, 3 teaspoons baking powder, and 1/2 teaspoon salt.  Rub 5 tablespoons lard in lightly and add just enough mild (1/2 cup) to make a soft dough.  Roll out to 1/8 inch thick on a slightly floured board and divide into 6 equal parts.  On each piece, lay a peach which has been pared, sprinkle with sugar, moisten the edges of the dough and fold up around the peach, pressing tightly together.  Place in a greased baking pan, sprinkle with sugar and put a piece of butter on the top of each dumpling.  Bake about 40 minutes in a moderate oven at 400 degrees Fahrenheit.  Serve with hard sauce.  Makes 6 dumplings.
